Preparation
- Slice both potatoes into chips or wedges, place onto a lined baking sheet, spray with Fry Light or Spray oil and pop them into a hot oven around 200c for 30 mins until crispy on the outside and soft and fluffy inside!
- Dice the peppers, onion and chicken breast and fry in a large frying pan or wok until the chicken is fully cooked and the veggies are softened.
- Add roughly 1 tsp of each of the spices into the chicken and veg mix in the pan and stir through off the heat.
- Take the chips out of the oven and add them into the pan with the chicken and veggies. Mix them thoroughly to coat all the chips in the delicious spice mixture, adding a little more salt or sweetener depending on your taste as they want to be on the verge of being savory/sweet!
- Pour onto a plate or bowl, top with whatever you fancy, you could top with some cheese or sour cream!
